Rainbow Lunchboxes Handouts
Ask children to bring in seasonal fruit to share every day and make a Rainbow fruit platter to share. Ask parents to send interesting fruit to share as well as the old reliables.
Left over fruit can be made into a Rainbow Fruit Salad for dessert.

Carers may need to keep a few interesting fruits on hand in case parents only send in apples, oranges and bananas. Passionfruit is a must and/or a few berries,
plus a squeeze of lime and a sprinkle of almond slivers.

Children will love to participate in making the Rainbow Fruit Salad, serve with plain yogurt.

Rainbow Snacks:
Rainbow vegie pieces: red capsicum, orange carrot, green capsicum,
snow peas and celery sticks.
Yellow natural corn chips, purple corn chips, seaweed paper, seaweed crackers
or rice crisps - serve with hommus, cottage cheese or tahini spread.

Rainbow Lunch:
Rainbow Rice salad (with chicken or meat).
Serve with mixed green salad and dressing.
Rainbow salad nicoise: tuna, tomatoes, greens, coloured capsicums,
black olives and purple onion.

Just a few ideas for you child’s lunch box. Mix, add or subtract from the suggestions below. Don’t forget to include a bottle of water for your child to drink throughout the day.

Milk or Soy drink
Wednesday Tahini and honey Rye crackers. Fresh fruit in season. Soy or Milk drink Turkish bread toasted with ham, cheese and roasted pumpkin with lettuce Cheese, olives and rice crackers. Fruit Milk or Soy shake
Thursday Banana smoothie. Dried fruit and almonds Pesto pasta topped with avocado and grated cheese Grilled cheese on rye or wholemeal bread
Fresh juice
Friday Buckwheat pancake with berries of your choice. Fresh juice Corn on the cob, grated carrot lettuce and baby beetroot topped with grated cheese. Apple pear fruit crumble with yogurt.
